A healthy and delicious twist on the classic Eggplant Parmesan, made easy in the air fryer.
Ingredients

- 1 large eggplant, sliced into rounds
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 eggs, beaten
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice the eggplant into rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- In one bowl, mix breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each eggplant round into the egg, then coat with the breadcrumb mixture.
- Place the coated eggplant rounds in the air fryer basket in a single layer.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown.
- Top each round with marinara sauce and mozzarella cheese, then air fry for an additional 2-3 minutes until the cheese is melted.
Notes
- For extra flavor, add garlic powder to the breadcrumb mixture.
- Serve with fresh basil for garnish.
- Adjust cooking time based on the thickness of the eggplant slices.
