A healthy and delicious twist on the classic Eggplant Parmesan, made easy in the air fryer.


Ingredients

  • 1 large eggplant, sliced into rounds
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs, beaten
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Slice the eggplant into rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In one bowl, mix breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  5. In another bowl, beat the eggs.
  6. Dip each eggplant round into the egg, then coat with the breadcrumb mixture.
  7. Place the coated eggplant rounds in the air fryer basket in a single layer.
  8. Air fry for 10-12 minutes, flipping halfway through, until golden brown.
  9. Top each round with marinara sauce and mozzarella cheese, then air fry for an additional 2-3 minutes until the cheese is melted.

Notes

  • For extra flavor, add garlic powder to the breadcrumb mixture.
  • Serve with fresh basil for garnish.
  • Adjust cooking time based on the thickness of the eggplant slices.
