- 1 cup apple cider
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon baking powder

- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the melted butter, sugar, eggs, and apple cider until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes before transferring them to a wire rack.
Notes
- For extra flavor, consider adding chopped apples or walnuts to the batter.
- These muffins can be stored in an airtight container for up to 3 days.
- For a sweeter touch, roll the cooled muffins in cinnamon sugar.
