- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder

- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 cup diced apples
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the apple cider, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the diced apples.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
