Instructions

  1. In a large bowl, mix flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until a dough forms. Wrap in plastic and refrigerate for at least 1 hour.
  3. Preheat the oven to 400°F (200°C).
  4. In a saucepan, combine diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat until apples are tender, about 5-7 minutes.
  5. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into squares or rectangles.
  6. Place a spoonful of apple filling in the center of each pastry piece. Fold corners to the center and pinch to seal.
  7. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  8. While baking, mix powdered sugar, milk, and vanilla to create the glaze.
