Ingredients

Scale
  • For the Dough:
    • 4 cups all-purpose flour
    • 1 packet (2 1/4 tsp) active dry yeast
    • 1 1/2 cups warm water (110°F)
    • 2 tbsp sugar
    • 1 tsp salt
    • 2 tbsp olive oil
  • For the Apple Filling:
    • 2 medium apples, peeled and diced
    • 1 tsp cinnamon
    • 1/4 cup brown sugar
    • 1 tbsp lemon juice
  • For the Topping:
    • 1/4 cup powdered sugar
    • 12 tbsp milk (for glaze)
    • 1/4 cup chopped pecans (optional)

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. While the dough rises, prepare the apple filling by mixing diced apples, cinnamon, brown sugar, and lemon juice in a bowl.
  6. Preheat the oven to 375°F (190°C).
  7. Once the dough has risen, punch it down and spread it onto a greased baking sheet, creating dimples with your fingers.
  8. Evenly distribute the apple filling over the dough, pressing it slightly into the surface.
  9. Bake for 25-30 minutes or until golden brown and the apples are tender.
  10. Let it cool slightly, then mix powdered sugar with milk to create a glaze and drizzle over the focaccia before serving.

Notes

  • This focaccia can be made a day in advance; store it in an airtight container at room temperature.
  • Leftovers can be stored in the fridge for up to 3 days; reheat in the oven for best texture.
  • For a vegan version, substitute milk with almond milk and use a plant-based butter for the glaze.
