- 2 large sweet potatoes
- 2 apples, sliced

Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the sweet potatoes, then boil them in salted water until tender.
- While the sweet potatoes are cooking, heat olive oil in a skillet over medium-high heat.
- Season the pork chops with salt and pepper, then sear them in the skillet for about 4-5 minutes on each side until golden brown.
- Add sliced apples to the skillet and cook for an additional 2-3 minutes.
- Transfer the pork chops and apples to the oven and bake for 10-15 minutes until the pork is cooked through.
- Drain the sweet potatoes and mash them with butter and cinnamon until smooth.
- Serve the pork chops on a bed of sweet potato mash, topped with the sautéed apples.

- For extra flavor, marinate the pork chops in apple cider vinegar for a few hours before cooking.
