Description
A delicious and healthy wrap filled with seasonal vegetables and drizzled with a sweet and tangy maple dijon dressing.
Ingredients
- Whole wheat wraps – 4
- Roasted sweet potatoes – 1 cup
- Brussels sprouts – 1 cup, shredded
- Red bell pepper – 1, sliced
- Carrots – 1 cup, shredded
- Spinach – 2 cups
- Maple syrup – 2 tablespoons
- Dijon mustard – 1 tablespoon
- Olive oil – 2 tablespoons
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potatoes and Brussels sprouts with olive oil, salt, and pepper, and roast for 25-30 minutes.
- In a small bowl, whisk together maple syrup and Dijon mustard to make the dressing.
- Assemble the wraps by layering spinach, roasted vegetables, and red bell pepper on each whole wheat wrap.
- Drizzle the maple dijon dressing over the top.
- Roll the wraps tightly and slice in half to serve.
Notes
- Feel free to add other seasonal vegetables like butternut squash or kale.
- These wraps can be made ahead of time and stored in the refrigerator.
