  • For the Bang Bang Sauce:

    • 1/4 cup sweet chili sauce

  • For the Bowl:
    • 2 cups cooked jasmine rice
    • 1 cup shredded carrots
    • 1 cup sliced cucumbers
    • 1/2 cup chopped green onions
    • 1/4 cup chopped cilantro

Instructions

  1. In a bowl, marinate the chicken pieces in buttermilk for at least 30 minutes to tenderize.
  2. Preheat the oil in a deep fryer or large pot to 350°F (175°C).
  3. In a separate bowl, mix flour, garlic powder, paprika, salt, and pepper.
  4. Remove chicken from buttermilk, allowing excess to drip off, then coat in the flour mixture.
  5. Fry the chicken in batches for 5-7 minutes or until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
  6. While the chicken is frying, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl to make the Bang Bang sauce.
  7. Assemble the bowls by placing a scoop of jasmine rice at the bottom, followed by fried chicken, shredded carrots, cucumbers, and a drizzle of Bang Bang sauce.
  8. Garnish with green onions and cilantro before serving.
