A refreshing and flavorful salad featuring grilled BBQ chicken skewers served over a bed of mixed greens and vegetables.


Ingredients

  • 2 chicken breasts, cubed
  • 1/4 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the cubed chicken, BBQ sauce, olive oil, garlic powder, onion powder, salt, and pepper. Mix well to coat the chicken.
  3. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked.
  5. While the chicken is grilling, prepare the salad by combining mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
  6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  7. Slice the chicken skewers and place them on top of the salad.
  8. Garnish with fresh parsley and serve with additional BBQ sauce if desired.

Notes

  • For a spicier kick, add some cayenne pepper to the chicken marinade.
