Description
A refreshing and flavorful salad featuring grilled BBQ chicken skewers served over a bed of mixed greens and vegetables.

- 2 chicken breasts, cubed
- 1/4 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the cubed chicken, BBQ sauce, olive oil, garlic powder, onion powder, salt, and pepper. Mix well to coat the chicken.
- Thread the marinated chicken onto skewers.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked.
- While the chicken is grilling, prepare the salad by combining mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
- Slice the chicken skewers and place them on top of the salad.
- Garnish with fresh parsley and serve with additional BBQ sauce if desired.
Notes
- For a spicier kick, add some cayenne pepper to the chicken marinade.
- This salad can be served warm or cold.
- Feel free to add other vegetables like bell peppers or avocado.
