- 4 medium sweet potatoes
- 2 cups pulled pork
- 1 cup BBQ sauce
- 1/2 cup shredded cheese (optional)
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- While the potatoes are baking, mix the pulled pork with BBQ sauce in a bowl.
- Once the sweet potatoes are done, let them cool slightly, then slice them open.
- Stuff each sweet potato with the BBQ pulled pork mixture.
- If desired, top with shredded cheese and green onions.
- Return to the oven for an additional 5-10 minutes to melt the cheese.
- Serve warm and enjoy!
