Ingredients

  • 4 medium sweet potatoes
  • 2 cups pulled pork
  • 1 cup BBQ sauce
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender.
  4. While the potatoes are baking, mix the pulled pork with BBQ sauce in a bowl.
  5. Once the sweet potatoes are done, let them cool slightly, then slice them open.
