Ingredients
- Coconut: 2 cups shredded unsweetened coconut
- Chili: 1-2 tablespoons sweet chili sauce (adjust to taste)
- Sweetener: 1 cup granulated sugar
- Acid: 1/4 cup fresh lime juice
- Thickener: 1/4 cup pectin
- Water: 1/2 cup
Instructions
- In a medium saucepan, combine the shredded coconut, sweet chili sauce, and water. Heat over medium heat until the mixture begins to simmer, about 5 minutes.
- Add the sugar and lime juice, stirring continuously until the sugar is fully dissolved, approximately 3-4 minutes.
- Stir in the pectin and bring the mixture to a rolling boil. Boil for 1-2 minutes until the mixture thickens slightly.
- Remove from heat and let it cool for 10 minutes before transferring to sterilized jars.
- Seal the jars and allow them to cool completely at room temperature before refrigerating.
