- 1 cup diced tomatoes
- 1 avocado, sliced

- 1 lime, cut into wedges
Instructions
- Preheat a skillet over medium-high heat.
- Rub the fish fillets with olive oil and coat with blackening seasoning.
- Place the fish in the hot skillet and cook for about 3-4 minutes on each side, or until cooked through and blackened.
- While the fish is cooking, prepare the rice and warm the corn and black beans.
- Once the fish is done, remove it from the skillet and let it rest for a minute before flaking it into bite-sized pieces.
