Ingredients

Scale
  • 1 lb white fish fillets (such as tilapia or cod)
  • 2 tablespoons blackening seasoning
  • 2 tablespoons olive oil
  • 4 cups cooked rice (white or brown)
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed and drained)
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat a skillet over medium-high heat.
  2. Rub the fish fillets with olive oil and coat with blackening seasoning.
  3. Place the fish in the hot skillet and cook for about 3-4 minutes on each side, or until cooked through and blackened.
  4. While the fish is cooking, prepare the rice and warm the corn and black beans.
  5. Once the fish is done, remove it from the skillet and let it rest for a minute before flaking it into bite-sized pieces.
  6. To assemble the bowls, start with a base of rice, then add corn, black beans, diced tomatoes, and flaked fish.
  7. Top with avocado slices, chopped cilantro, and a squeeze of lime juice.

Notes
