These blueberry biscuits are a delightful combination of flaky, buttery layers and bursts of juicy blueberries. Each bite offers a perfect balance of sweetness and a hint of tartness, making them an irresistible treat for breakfast or brunch.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Pour in the buttermilk and gently mix until just combined.
  5. Fold in the fresh blueberries carefully to avoid breaking them.
  6. Turn the dough out onto a floured surface and knead gently 2-3 times until it comes together.
  7. Pat the dough into a 1-inch thick rectangle and cut out biscuits using a round cutter.
  8. Place the biscuits on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.

Notes

  • These biscuits can be made ahead and stored in an airtight container for up to 2 days.
  • For longer storage, freeze the unbaked biscuits on a baking sheet, then transfer to a freezer bag for up to 3 months.
  • You can substitute the blueberries with raspberries or chopped strawberries for a different flavor.
