Instructions
- In a mixing bowl, combine the filling ingredients: 4 oz cream cheese, 1/4 cup powdered sugar, and 1/2 teaspoon vanilla extract. Whip until smooth and freeze for 30 minutes.
- Preheat your oven to 350°F and line your baking sheet with parchment paper.
- In a bowl, whisk together the dry ingredients: flour, baking soda, cornstarch, and salt. Set aside.
- Cream together the butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and lemon zest to the butter mixture until fully incorporated.
- Gradually add the dry mixture to the wet ingredients and stir until just combined. Gently fold in the blueberries.
- Scoop about a tablespoon of dough, flatten it, place one frozen cheesecake dollop in the center, and cover it with another tablespoon of dough. Seal the edges.
- Space cookies on the baking sheet and bake for 11-13 minutes, or until edges are lightly golden. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
