Description

Bombolini are Italian donuts that are light, fluffy, and filled with delicious cream or jam, making them a delightful treat for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup milk, warmed
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting
  • Filling of choice (cream, jam, or custard)

Instructions

  1. In a bowl, combine warm milk and yeast, letting it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together flour, sugar, and salt.
  3. Add the yeast mixture, eggs, melted butter, and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Once risen, punch down the dough and roll it out to about 1/2 inch thickness.
  7. Cut out circles using a cookie cutter and place them on a floured surface to rise for another 30 minutes.
  8. Heat oil in a deep fryer or large pot to 350°F (175°C).
  9. Fry the donuts in batches until golden brown, about 2-3 minutes on each side.
  10. Remove from oil and drain on paper towels, then fill with your choice of filling and dust with powdered sugar before serving.

Notes

  • Ensure the oil is at the right temperature to avoid greasy donuts.
  • Experiment with different fillings for variety.
  • These donuts are best enjoyed fresh but can be stored in an airtight container for a day.
