- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Buffalo Sauce:
- 1/2 cup hot sauce (like Frank’s RedHot)

- 1 tablespoon olive oil
- Salt and pepper to taste
- Garnish:
- 1/4 cup crumbled blue cheese (optional)

Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
- While the potatoes are roasting, prepare the buffalo sauce by whisking together hot sauce, melted butter, and apple cider vinegar in a small bowl.
- In a separate pan, heat 1 tablespoon of olive oil over medium heat and sauté the shaved Brussels sprouts for 5-7 minutes until they are tender and slightly caramelized. Season with salt and pepper.
- Once the potatoes are done, remove them from the oven and toss them in the buffalo sauce until well coated.
- To assemble the bowl, layer the crispy buffalo potatoes and sautéed Brussels sprouts. Top with crumbled blue cheese and sliced green onions if desired.
- Serve immediately and enjoy your flavorful Buffalo Bites Bowl!
