    • 1/2 cup hot sauce (like Frank’s RedHot)
    • 1/4 cup unsalted butter, melted
    • 1 tablespoon apple cider vinegar
  • Shaved Brussels Sprouts:
    • 1 pound Brussels sprouts, thinly sliced
    • 1 tablespoon olive oil
    • Salt and pepper to taste
  • Garnish:
    • 1/4 cup crumbled blue cheese (optional)
    • 2 green onions, sliced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
  4. While the potatoes are roasting, prepare the buffalo sauce by whisking together hot sauce, melted butter, and apple cider vinegar in a small bowl.
  5. In a separate pan, heat 1 tablespoon of olive oil over medium heat and sauté the shaved Brussels sprouts for 5-7 minutes until they are tender and slightly caramelized. Season with salt and pepper.
  6. Once the potatoes are done, remove them from the oven and toss them in the buffalo sauce until well coated.
  7. To assemble the bowl, layer the crispy buffalo potatoes and sautéed Brussels sprouts. Top with crumbled blue cheese and sliced green onions if desired.
