Buffalo Chicken Stuffed Sweet Potatoes are a delicious and healthy twist on traditional buffalo chicken, combining tender sweet potatoes with spicy buffalo chicken filling.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup Greek yogurt
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a bowl, mix the shredded chicken with buffalo sauce, Greek yogurt, salt, and pepper.
  4. Once the sweet potatoes are cooked, let them cool slightly, then slice them open.
  5. Stuff each sweet potato with the buffalo chicken mixture.
  6. Top with shredded cheddar cheese and green onions.
  7. Return to the oven for an additional 10 minutes to melt the cheese.
