- 1 medium butternut squash, peeled and diced
- 2 cups fresh spinach
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 pre-made flatbread
- 1/2 cup feta cheese, crumbled (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, pepper, and garlic powder.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- While the squash is roasting, prepare the flatbread on a baking sheet.
- Once the squash is done, spread it evenly over the flatbread.
- Add fresh spinach on top of the squash.
- If using, sprinkle feta cheese over the spinach.
- Bake the flatbread in the oven for an additional 10-15 minutes until the edges are crispy.
- Remove from the oven, slice, and serve warm.
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add other toppings like olives or sun-dried tomatoes.
- This flatbread can be served as an appetizer or a main dish.
