Description

A delicious flatbread topped with roasted butternut squash and fresh spinach, perfect for a healthy meal or snack.


Ingredients

  • 1 medium butternut squash, peeled and diced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 pre-made flatbread
  • 1/2 cup feta cheese, crumbled (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, pepper, and garlic powder.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. While the squash is roasting, prepare the flatbread on a baking sheet.
  5. Once the squash is done, spread it evenly over the flatbread.
  6. Add fresh spinach on top of the squash.
  7. If using, sprinkle feta cheese over the spinach.
  8. Bake the flatbread in the oven for an additional 10-15 minutes until the edges are crispy.
  9. Remove from the oven, slice, and serve warm.

Notes

  • For a vegan option, omit the feta cheese.
  • Feel free to add other toppings like olives or sun-dried tomatoes.
