Instructions
- In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and bell pepper, cooking for an additional 3-4 minutes until softened.
- Stir in the ground meat, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Add the chopped cabbage, broth, diced tomatoes, tomato paste, thyme, paprika, salt, and pepper. Bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
- After 30 minutes, add the uncooked rice and continue to simmer for another 20 minutes, or until the rice is tender.
- Taste and adjust seasoning if necessary before serving hot.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- To freeze, let the soup cool completely, then transfer to airtight containers for up to 3 months.
- For a vegetarian version, substitute ground meat with lentils or mushrooms and use vegetable broth.
