- 1 pound shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup chopped green onions
- 8 slices of baguette, toasted
Instructions
- In a bowl, combine shrimp, Cajun seasoning, olive oil, and lemon juice. Mix well.
- Heat a skillet over medium heat and cook the shrimp for 3-4 minutes until pink and cooked through.
- In another bowl, mix mayonnaise, Dijon mustard, and green onions.
- Spread the mayonnaise mixture on each slice of toasted baguette.
- Top each toast with the cooked Cajun shrimp.
- Serve immediately and enjoy!

- Adjust the amount of Cajun seasoning to taste.
- For a spicier kick, add some hot sauce to the shrimp mixture.
