- 12 large mushrooms
- 1 cup cherry tomatoes, diced
- 1 cup fresh mozzarella, diced
- 1/4 cup fresh basil, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- In a bowl, mix together the diced tomatoes, mozzarella, basil, balsamic vinegar, olive oil, salt, and pepper.
- Stuff each mushroom cap with the mixture.
- Place the stuffed mushrooms on a baking sheet.
- Bake for 20-25 minutes or until the mushrooms are tender and the cheese is melted.
