- 1 cup chopped pecans
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/2 cup caramel sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped pecans.
- Pour the batter into a greased baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
- While the pudding is baking, prepare the toffee sauce by heating the heavy cream and caramel sauce in a saucepan over medium heat.
- Once the pudding is done, pour the warm toffee sauce over the top and let it soak in before serving.
Notes
- Serve warm with vanilla ice cream for an extra treat.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
