- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 1–2 tablespoons milk
Instructions
- Preheat the oven to 350°F (175°C), and grease a 9×13 inch baking dish.
- Combine dry ingredients: In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Mix liquid ingredients: In another bowl, whisk together melted butter, eggs, and vanilla extract.
- Combine mixtures: Gradually add wet ingredients to dry ingredients, stirring gently until just combined.
- Add grated carrots to the batter and fold evenly.
- Pour the batter into the greased dish, smoothing it out evenly.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Prepare the cream cheese drizzle by beating together softened cream cheese, powdered sugar, and milk.
- Drizzle the cream cheese mixture over the cooled bars, slice, and serve.
Notes
These bars can be stored in the refrigerator for up to a week. They also freeze well for up to three months.
