- 1/2 cup butterscotch chips
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a mixing bowl.
- Beat the softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until smooth.
- Gradually combine the dry ingredients into the wet mixture, mixing gently.
- Fold in the grated carrots, rolled oats, and butterscotch chips.
- Using a cookie scoop or tablespoon, drop portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes until the edges are golden.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
For a healthier twist, consider using whole wheat flour instead of all-purpose flour. You can also replace butterscotch chips with raisins or chocolate chips.
