Ingredients

  • 1/2 cup crushed pineapple, drained
  • 1/4 cup chopped walnuts
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) fruit pectin

Instructions

  1. In a large pot, combine grated carrots, sugar, crushed pineapple, walnuts, cinnamon, nutmeg, ginger, and salt.
  2. Stir in lemon juice and bring the mixture to a boil over medium heat.
  3. Once boiling, add the fruit pectin and stir continuously for 1-2 minutes until well combined.
  4. Continue to boil for an additional 5 minutes, stirring frequently.
  5. Remove from heat and skim off any foam that forms on the surface.
  6. Pour the hot jam into sterilized jars and seal immediately.
  7. Allow the jars to cool completely before storing them in the refrigerator.
