- 1 cup sugar
- 1/2 cup crushed pineapple, drained
- 1/4 cup chopped walnuts
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 cup lemon juice
- 1 package (1.75 oz) fruit pectin
Instructions
- In a large pot, combine grated carrots, sugar, crushed pineapple, walnuts, cinnamon, nutmeg, ginger, and salt.
- Stir in lemon juice and bring the mixture to a boil over medium heat.
- Once boiling, add the fruit pectin and stir continuously for 1-2 minutes until well combined.
- Continue to boil for an additional 5 minutes, stirring frequently.
- Remove from heat and skim off any foam that forms on the surface.
- Pour the hot jam into sterilized jars and seal immediately.
- Allow the jars to cool completely before storing them in the refrigerator.

- Ensure that the jars are properly sterilized to prevent spoilage.
- This jam can be stored in the refrigerator for up to 3 weeks.
- For a spicier flavor, consider adding a pinch of cloves.
