- 1 medium head of cauliflower, cut into florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup vodka
- 1 can (14 oz) crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cauliflower florets with olive oil, salt, and pepper, then spread them on a baking sheet.
- Roast the cauliflower for 25-30 minutes until golden brown and tender.
- In a large skillet, sauté the onion and garlic over medium heat until softened.
- Add the vodka to the skillet and let it simmer for a few minutes to reduce.
- Stir in the crushed tomatoes and simmer for another 10 minutes.
- Reduce the heat and add the heavy cream and Parmesan cheese, stirring until combined.
- Add the roasted cauliflower to the sauce and mix well.
- Serve hot, garnished with fresh basil.
Notes
- For a vegan version, substitute heavy cream with coconut cream and omit the Parmesan cheese.
- Adjust the amount of vodka according to your taste preference.
