Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 clove garlic, minced
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, turmeric, salt, and black pepper until well coated.
  3. Spread the cauliflower on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes, or until the cauliflower is charred and tender.
  5. While the cauliflower is roasting, prepare the turmeric tahini sauce by whisking together tahini, lemon juice, water, and minced garlic in a small bowl until smooth.
  6. Once the cauliflower is done, remove it from the oven and drizzle the turmeric tahini sauce over the top.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a pinch of cayenne pepper to the tahini sauce.
