- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, turmeric, salt, and black pepper until well coated.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until the cauliflower is charred and tender.
- While the cauliflower is roasting, prepare the turmeric tahini sauce by whisking together tahini, lemon juice, water, and minced garlic in a small bowl until smooth.
- Once the cauliflower is done, remove it from the oven and drizzle the turmeric tahini sauce over the top.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of cayenne pepper to the tahini sauce.
- This dish can be served warm or at room temperature.
