- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, diced
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add mushrooms and cook until softened, then stir in spinach and cook until wilted.
- In a bowl, combine the sautéed mixture with cream cheese and half of the mozzarella cheese. Season with salt and pepper.
- Cut a pocket in each chicken breast and stuff with the mushroom and spinach mixture.
- Place stuffed chicken breasts in a baking dish and top with remaining mozzarella cheese.
- Bake for 25-30 minutes or until chicken is cooked through and cheese is bubbly.
- Let rest for a few minutes before serving.
