  • For the Dough:
    • 3 cups all-purpose flour
    • 1 packet (2 1/4 tsp) active dry yeast
    • 1 cup warm water (110°F)
    • 2 tbsp sugar
    • 1 tsp salt
    • 2 tbsp olive oil
  • For the Filling:
    • 1 1/2 cups shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 4 cloves garlic, minced
    • 2 tbsp fresh parsley, chopped
    • 1/2 tsp red pepper flakes (optional)
  • For the Topping:
    • 4 tbsp unsalted butter, melted
    • 1 tsp garlic powder
    • 1 tbsp fresh parsley, chopped

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 375°F (190°C).
  6. In a separate bowl, mix together the mozzarella, Parmesan, garlic, parsley, and red pepper flakes for the filling.
  7. Once the dough has risen, punch it down and divide it into 12 equal pieces.
  8. Flatten each piece, place a generous spoonful of the cheese filling in the center, and fold the dough over to seal it.
  9. Place the rolls seam-side down on a greased baking sheet, cover, and let rise for another 30 minutes.
  10. Brush the tops with melted butter mixed with garlic powder and parsley.
  11. Bake for 20-25 minutes or until golden brown and the cheese is bubbling.

Notes

  • These rolls can be made ahead and stored in the refrigerator for up to 2 days before baking.
  • To freeze, place unbaked rolls on a baking sheet, freeze until solid, then transfer to a freezer bag. Bake from frozen, adding an extra 5-10 minutes to the baking time.
