- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1/2 tsp red pepper flakes (optional)
- For the Topping:
- 4 tbsp unsalted butter, melted
- 1 tsp garlic powder
- 1 tbsp fresh parsley, chopped
Instructions
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 375°F (190°C).
- In a separate bowl, mix together the mozzarella, Parmesan, garlic, parsley, and red pepper flakes for the filling.
- Once the dough has risen, punch it down and divide it into 12 equal pieces.
- Flatten each piece, place a generous spoonful of the cheese filling in the center, and fold the dough over to seal it.
- Place the rolls seam-side down on a greased baking sheet, cover, and let rise for another 30 minutes.
- Brush the tops with melted butter mixed with garlic powder and parsley.
- Bake for 20-25 minutes or until golden brown and the cheese is bubbling.

- These rolls can be made ahead and stored in the refrigerator for up to 2 days before baking.
- To freeze, place unbaked rolls on a baking sheet, freeze until solid, then transfer to a freezer bag. Bake from frozen, adding an extra 5-10 minutes to the baking time.
