Cherry Almond Crumble Bars are a delightful dessert featuring a sweet cherry filling topped with a crunchy almond crumble.

- 2 cups fresh or frozen cherries
- 1 cup almond flour
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sliced almonds
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the cherries with granulated sugar and set aside.
- In another bowl, combine almond flour, all-purpose flour, brown sugar, melted butter, almond extract, vanilla extract, and salt to form a crumbly mixture.
- Press half of the crumble mixture into the bottom of a greased baking dish.
- Spread the cherry mixture evenly over the crust.
- Sprinkle the remaining crumble mixture on top of the cherries.
- Top with sliced almonds.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- For a gluten-free version, substitute all-purpose flour with gluten-free flour.
- These bars can be stored in an airtight container for up to a week.
- Serve warm with a scoop of vanilla ice cream for an extra treat.
