- 2 cups fresh cherries, pitted and halved
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- Whipped Cream:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, sift together the cake flour, granulated sugar, salt, and baking powder.
- In a separate bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add the sugar mixture to the egg whites, continuing to beat until stiff peaks form.
- Gently fold in the vanilla extract.
- Pour the batter into an ungreased angel food cake pan and smooth the top.
- Bake for 35-40 minutes or until the cake springs back when lightly touched.
- Remove from the oven and invert the pan to cool completely.
- While the cake cools, prepare the cherry topping by combining cherries, sugar, and lemon juice in a bowl; let sit for 15 minutes.
- Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Once the cake is cool, remove it from the pan, slice, and serve topped with cherries and whipped cream.

- This cake can be made a day in advance; store it covered at room temperature.
- Leftover cake can be stored in an airtight container for up to 3 days.
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
