Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, sift together the cake flour, granulated sugar, salt, and baking powder.
  3. In a separate bowl, beat the egg whites and cream of tartar until soft peaks form.
  4. Gradually add the sugar mixture to the egg whites, continuing to beat until stiff peaks form.
  5. Gently fold in the vanilla extract.
  6. Pour the batter into an ungreased angel food cake pan and smooth the top.
  7. Bake for 35-40 minutes or until the cake springs back when lightly touched.
  8. Remove from the oven and invert the pan to cool completely.
  9. While the cake cools, prepare the cherry topping by combining cherries, sugar, and lemon juice in a bowl; let sit for 15 minutes.
  10. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  11. Once the cake is cool, remove it from the pan, slice, and serve topped with cherries and whipped cream.
