- For the filling:
- 4 cups Granny Smith apples, peeled, cored, and sliced
- ¾ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons lemon juice
- 2 tablespoons cornstarch
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Stir in vanilla extract and enough ice water to form a dough. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for 30 minutes.
- In another bowl, mix the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well combined.
- Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Place it in the pan and fill with the apple mixture.
- Roll out the second disc of dough and place it over the filling. Seal the edges and cut slits in the top for steam to escape.
- Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool for at least 15 minutes before slicing and serving.
