    • 2 tablespoons lemon juice
    • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in vanilla extract and enough ice water to form a dough. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for 30 minutes.
  4. In another bowl, mix the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well combined.
  5. Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Place it in the pan and fill with the apple mixture.
  6. Roll out the second disc of dough and place it over the filling. Seal the edges and cut slits in the top for steam to escape.
