- 1 lb chicken breast, diced
- 2 apples, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 can coconut milk (400ml)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until translucent.
- Add ginger and curry powder, cook for another minute.
- Add diced chicken and cook until browned.
- Stir in chopped apples and coconut milk, bring to a simmer.
- Season with salt and pepper, and let it cook for 15-20 minutes until chicken is cooked through.
- Serve hot, garnished with fresh cilantro.

- For a spicier version, add chili flakes or fresh chili.
