  • Chicken: 1 pound boneless, skinless chicken breast, sliced thinly
  • Noodles: 8 ounces chow mein noodles, cooked according to package instructions
  • Vegetables:
    • 1 cup bean sprouts
    • 1 cup shredded carrots
    • 1 cup bell peppers, sliced
    • 1 cup broccoli florets
  • Sauce:
    • 1/4 cup soy sauce
    • 2 tablespoons oyster sauce
    • 1 tablespoon cornstarch
    • 1 tablespoon sesame oil
    • 1 teaspoon garlic, minced
    • 1 teaspoon ginger, minced

Instructions

  1. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  2. Add the sliced chicken and cook for 5-7 minutes until golden brown and cooked through, stirring frequently.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, sesame oil, garlic, and ginger.
  6. Add the cooked noodles and chicken back to the skillet, then pour the sauce over the top.
  7. Toss everything together and cook for an additional 2-3 minutes until heated through and the sauce thickens.
  8. Serve hot, garnished with green onions if desired.
