Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, rinsed
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge in flour, shaking off the excess.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
  3. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer.
  5. Return the chicken to the skillet and cook for an additional 5 minutes, allowing the flavors to meld.
  6. Remove the chicken again and whisk in the remaining butter until melted and the sauce is smooth.
  7. Serve the chicken topped with the sauce and garnish with fresh parsley.
