- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers, rinsed
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Season the chicken breasts with salt and pepper, then dredge in flour, shaking off the excess.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
- Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer.
- Return the chicken to the skillet and cook for an additional 5 minutes, allowing the flavors to meld.
- Remove the chicken again and whisk in the remaining butter until melted and the sauce is smooth.
- Serve the chicken topped with the sauce and garnish with fresh parsley.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- Serve with pasta or a side of vegetables for a complete meal.
