Ingredients

  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • Salt & Black Pepper to taste
  • 2 cups Cooked Rice (white, brown, or jasmine)
  • 1 Cucumber, diced
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Onion, diced
  • 1/4 cup Parsley, chopped
  • 1 cup Greek Yogurt
  • 2 tbsp Lemon Juice
  • 1 tbsp Dill

Instructions

  1. Season the chicken breast with olive oil, garlic powder, paprika, salt, and pepper; marinate for at least 30 minutes.
  2. Cook the chicken on a grill or in a skillet until it reaches an internal temperature of 165°F, about 6-7 minutes per side.
  3. Prepare the tzatziki by mixing Greek yogurt, diced cucumber, lemon juice, dill, salt, and pepper until creamy.
  4. Chop the cherry tomatoes and red onion, and chop the parsley.
  5. Assemble the bowl with cooked rice, fresh veggies, sliced chicken, and top with tzatziki.
