- 1 lb Chicken Breast
- 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Paprika
- Salt & Black Pepper to taste
- 2 cups Cooked Rice (white, brown, or jasmine)
- 1 Cucumber, diced
- 1 cup Cherry Tomatoes, halved
- 1 Red Onion, diced
- 1/4 cup Parsley, chopped
- 1 cup Greek Yogurt
- 2 tbsp Lemon Juice
- 1 tbsp Dill
Instructions
- Season the chicken breast with olive oil, garlic powder, paprika, salt, and pepper; marinate for at least 30 minutes.
- Cook the chicken on a grill or in a skillet until it reaches an internal temperature of 165°F, about 6-7 minutes per side.
- Prepare the tzatziki by mixing Greek yogurt, diced cucumber, lemon juice, dill, salt, and pepper until creamy.
- Chop the cherry tomatoes and red onion, and chop the parsley.
- Assemble the bowl with cooked rice, fresh veggies, sliced chicken, and top with tzatziki.
- Serve immediately and enjoy the colorful medley of flavors.
Notes
For a smoky flavor, use an air fryer or oven. Prepare tzatziki in advance for a more robust taste.
