Ingredients

- 4 ripe peaches, peeled and pitted
- 1 cup vegetable broth
- 1/2 cup Greek yogurt
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions
- In a blender, combine the peaches, vegetable broth, Greek yogurt, honey, and lemon juice.
- Blend until smooth and creamy.
- Season with salt and pepper to taste.
- Chill the soup in the refrigerator for at least 1 hour.
- Serve in bowls, garnished with fresh mint leaves.
Notes
- For a vegan version, substitute Greek yogurt with coconut yogurt.
- Adjust sweetness by adding more or less honey based on your preference.
