Instructions

  1. In a bowl, mix the chipotle in adobo, olive oil, garlic powder, cumin, salt, and pepper to create a marinade.
  2. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat the grill to medium-high heat (about 375°F).
  4. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink inside.
  5. While the chicken is grilling, prepare the lime mayo by mixing mayonnaise, lime juice, lime zest, and garlic powder in a small bowl.
  6. Once the chicken is cooked, let it rest for 5 minutes before slicing.
  7. Spread lime mayo on the toasted buns, then layer with lettuce, sliced tomato, grilled chicken, and avocado.
  8. Top with the other half of the bun and serve immediately.
