Instructions
- In a bowl, mix the chipotle in adobo, olive oil, garlic powder, cumin, salt, and pepper to create a marinade.
- Coat the chicken breasts in the marinade and let them sit for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat the grill to medium-high heat (about 375°F).
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink inside.
- While the chicken is grilling, prepare the lime mayo by mixing mayonnaise, lime juice, lime zest, and garlic powder in a small bowl.
- Once the chicken is cooked, let it rest for 5 minutes before slicing.
- Spread lime mayo on the toasted buns, then layer with lettuce, sliced tomato, grilled chicken, and avocado.
- Top with the other half of the bun and serve immediately.
