- 1 cup chocolate chips
- 1 tablespoon coconut oil

Instructions
- Start by softening the ice cream for about 10 minutes at room temperature.
- Fill each mini taco shell with a generous scoop of ice cream.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth.
- Dip the top of each filled taco shell into the melted chocolate, allowing excess to drip off.
- Sprinkle with toppings if desired.
- Place the tacos on a parchment-lined tray and freeze for at least 30 minutes to set the chocolate.
- Serve immediately after freezing and enjoy!
Notes
- Feel free to use different flavors of ice cream for variety.
