Ingredients
Scale
- Macaron Shells:
- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites, aged for 24 hours
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Vanilla Buttercream Filling:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- White Chocolate Drizzle:
- 1/2 cup white chocolate chips
Instructions
- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a bowl, sift together the almond flour and powdered sugar to remove any lumps.
- In a separate bowl, beat the aged egg whites with a pinch of salt until foamy, then gradually add the granulated sugar, continuing to beat until stiff peaks form.
- Gently fold the dry ingredients into the meringue in three additions, being careful not to deflate the mixture.
- Add the vanilla extract and mix until just combined. The batter should flow like lava.
- Transfer the batter to a piping bag fitted with a round tip and pipe 1.5-inch circles onto the prepared baking sheets.
- Let the piped macarons sit at room temperature for 30-60 minutes until a skin forms on the surface.
- Bake for 15-18 minutes, or until the shells are firm and can be lifted off the parchment without sticking.
- Allow the shells to cool completely before filling.
- For the buttercream, beat the softened butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla extract until smooth.
- Pipe a dollop of buttercream onto the flat side of one macaron and sandwich with another shell.
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle over the assembled macarons.
- Let the macarons set for at least 30 minutes before serving to allow the flavors to meld.
