  • Author: Jessica
  • Total Time: 3 hours
  • Yield: 12 servings 1x
  • Diet: Vegetarian

Description

The Christmas Jello Cake is a vibrant, multi-layered dessert that bursts with fruity flavors and a delightful, wobbly texture. Each slice reveals a stunning array of colors, reminiscent of holiday cheer, while the creamy frosting adds a smooth richness that perfectly balances the sweetness of the jello layers.

Ingredients

Scale
  • For the Cake:
    • 1 box of white cake mix (15.25 oz)
    • 1 cup water
    • 1/3 cup vegetable oil
    • 3 large eggs
  • For the Jello Layers:
    • 3 cups boiling water
    • 3 boxes of flavored jello (3 oz each, assorted colors)
  • For the Frosting:
    • 1 cup heavy whipping cream
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Beat on medium speed for 2 minutes until well blended.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. While the cake is baking, prepare the jello layers by dissolving each box of jello in 1 cup of boiling water. Stir until completely dissolved.
  5. Once the cake is done, allow it to cool completely in the pan.
  6. Once cooled, poke holes all over the cake using a fork. Pour the first layer of jello over the cake and refrigerate for 30 minutes until set.
  7. Repeat the process with the remaining jello layers, allowing each layer to set before adding the next.
  8. For the frosting, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread over the top of the set jello cake.
  9. Chill the cake for at least 2 hours before serving to allow the flavors to meld.

Notes

  • This cake can be made a day in advance and stored in the refrigerator.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • For a lighter version, use sugar-free jello and a low-fat whipped topping.
