Ingredients
Scale
- Cake:
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 ½ cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- Poke Filling:
- 1 cup sweetened condensed milk
- ½ cup heavy cream
- Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla, and vinegar until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the cake to cool for 10 minutes, then poke holes all over the top using a fork.
- In a separate bowl, whisk together the sweetened condensed milk and heavy cream, then pour this mixture over the warm cake, ensuring it seeps into the holes.
- Let the cake cool completely, then refrigerate for at least 2 hours.
- For the frosting, beat the cream cheese and butter together until smooth, then gradually add the powdered sugar and vanilla, mixing until fluffy.
- Spread the frosting evenly over the cooled cake and serve chilled.
Notes
- This cake can be made a day in advance; just keep it covered in the refrigerator.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For a lighter version, substitute Greek yogurt for the cream cheese in the frosting.
