- 4 cups powdered sugar

- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Flatten each ball slightly with the bottom of a glass.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the filling, beat together the softened butter, powdered sugar, vanilla, and peppermint extract until smooth. Add milk as needed for desired consistency.
- Once cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to create a sandwich.
