    • 1 box of vanilla cake mix (15.25 oz)
    • 3 large eggs
    • 1 cup water
    • 1/2 cup vegetable oil
  • Frosting:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1/4 cup heavy cream
    • 1 teaspoon vanilla extract
  • Fruit Layer:
    • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • Garnish:
    • 1/2 cup crushed peppermint candies
    • Fresh mint leaves

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cake mix, eggs, water, and vegetable oil. Mix until smooth.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool completely in the pan on a wire rack.
  5. While the cake cools, prepare the frosting by beating the softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla extract, mixing until fluffy.
  6. Once the cake is cool, cut it into small cubes.
  7. In a large trifle dish, layer half of the cake cubes, followed by half of the frosting, and half of the mixed berries. Repeat the layers.
  8. Top with crushed peppermint candies and fresh mint leaves for garnish.
  9. Chill in the refrigerator for at least 2 hours before serving.
