Ingredients
- Beef Roast: 3-4 pounds of chuck roast, trimmed
- Seasoning: 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder
- Vegetables: 2 large onions, quartered; 4 carrots, chopped; 3 stalks of celery, chopped
- Liquid: 2 cups beef broth; 1 cup red wine (optional)
- Herbs: 2 sprigs fresh rosemary; 2 sprigs fresh thyme
- Oil: 2 tablespoons vegetable oil for searing
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef roast generously with salt, pepper, garlic powder, and onion powder.
- In a large Dutch oven, heat the vegetable oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Remove the roast and set aside. In the same pot, add the onions, carrots, and celery, sautéing for 5-7 minutes until softened.
- Return the roast to the pot, add the beef broth and red wine, and nestle the herbs around the meat.
- Cover the pot and transfer it to the preheated oven. Roast for 3-4 hours, or until the meat is fork-tender.
- Remove the roast from the oven and let it rest for 15 minutes before slicing.
Notes
- This roast can be made a day in advance; simply reheat gently in the oven before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a gluten-free option, omit the red wine or use a gluten-free broth.
