Ingredients

  • 6 hard-boiled eggs
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon red pepper flakes
  • 1 clove garlic, peeled and smashed
  • 1 bay leaf

Instructions

  1. Peel the hard-boiled eggs and place them into a clean glass jar.
  2. Create the brine by mixing white vinegar, water, sugar, and salt in a saucepan over medium heat until dissolved.
  3. Add spices including black peppercorns, mustard seeds, red pepper flakes, smashed garlic, and bay leaf to the mixture.
  4. Cool the brine by removing it from heat and allowing it to sit for a few minutes.
  5. Combine the cooled brine with the eggs in the jar, making sure they are fully submerged.
  6. Seal the jar tightly and refrigerate, allowing it to sit for at least three days.
  7. Enjoy the pickled eggs after the waiting period has passed.

Notes

Improves in flavor if made ahead and left to mature for a week.
