Ingredients

  • Sweet Potatoes: 4 large, peeled and cubed
  • Butter: 1/2 cup, melted
  • Brown Sugar: 1 cup, packed
  • Granulated Sugar: 1/2 cup
  • Eggs: 2, beaten
  • Vanilla Extract: 1 teaspoon
  • Milk: 1/2 cup
  • Salt: 1/2 teaspoon
  • Pecan Topping:
    • Pecans: 1 cup, chopped
    • Flour: 1/2 cup
    • Brown Sugar: 1/2 cup
    • Butter: 1/4 cup, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot of salted water for about 15-20 minutes, or until tender. Drain and let cool slightly.
  3. In a large mixing bowl, mash the sweet potatoes until smooth.
  4. Add melted butter, brown sugar, granulated sugar, beaten eggs, vanilla extract, milk, and salt to the mashed sweet potatoes. Mix until well combined.
