    • 1/4 cup brown sugar, packed
    • 1 large egg
    • 1 teaspoon vanilla extract
  • For the Marshmallow Filling:
    • 1 cup mini marshmallows
    • 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a tablespoon, scoop out dough and roll into balls. Place them on a baking sheet lined with parchment paper.
  7. Using your thumb, make an indentation in the center of each cookie.
  8. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  9. Remove from the oven and immediately fill each indentation with a mini marshmallow and a few chocolate chips.
  10. Return to the oven for an additional 2-3 minutes, until the marshmallows are slightly puffed.
  11. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
