- For the Cookies:
- 1 cup all-purpose flour

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- For the Marshmallow Filling:
- 1 cup mini marshmallows
- 1/4 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a tablespoon, scoop out dough and roll into balls. Place them on a baking sheet lined with parchment paper.
- Using your thumb, make an indentation in the center of each cookie.
- Bake for 10-12 minutes, until the edges are set but the centers are still soft.
- Remove from the oven and immediately fill each indentation with a mini marshmallow and a few chocolate chips.
- Return to the oven for an additional 2-3 minutes, until the marshmallows are slightly puffed.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
