- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsweetened shredded coconut
- 1/2 cup unsalted butter, melted
- 1 cup sweetened condensed milk
- 1 cup coconut cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- Additional shredded coconut for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, shredded coconut, and melted butter until combined.
- Press the mixture into the bottom of a greased 9×9 inch baking dish.
- Bake the crust for 10 minutes, then let it cool.
- In another bowl, whisk together sweetened condensed milk, coconut cream, powdered sugar, and vanilla extract until smooth.
- Pour the coconut mixture over the cooled crust and spread evenly.
- Refrigerate for at least 2 hours to set.
- Before serving, top with whipped cream and additional shredded coconut.
Notes
- For a stronger coconut flavor, use coconut extract in addition to vanilla.
- These bars can be made a day in advance for convenience.
- Store leftovers in the refrigerator for up to 3 days.
