- 1 box of white cake mix
- 1 cup coconut milk
- 1/4 cup lime juice and zest of 1 lime
- 1 cup sweetened shredded coconut
- 1 container of whipped topping
- Toasted coconut for garnish
Instructions
- Preheat your oven according to the cake mix package instructions. Grease a 9×13 inch baking dish thoroughly.
- Prepare the cake batter according to the package directions, using coconut milk instead of water.
- Pour the batter into the prepared baking dish, spreading evenly. Bake according to package instructions until a toothpick inserted comes out clean.
- Cool the cake for 15 minutes in the pan. Poke holes in the cake with a fork.
- Mix together the lime juice and zest in a separate bowl. Pour this mixture over the cake.
- Spread the whipped topping evenly across the cake.
- Sprinkle the shredded coconut on top and add toasted coconut for garnish.
- Chill the cake in the refrigerator for at least 2 hours before serving.
Notes
You can make the cake a day in advance. Allow it to cool completely before adding the lime mixture and topping with whipped cream.
