Ingredients

  • 1 box of white cake mix
  • 1 cup coconut milk
  • 1/4 cup lime juice and zest of 1 lime
  • 1 cup sweetened shredded coconut
  • 1 container of whipped topping
  • Toasted coconut for garnish

Instructions

  1. Preheat your oven according to the cake mix package instructions. Grease a 9×13 inch baking dish thoroughly.
  2. Prepare the cake batter according to the package directions, using coconut milk instead of water.
  3. Pour the batter into the prepared baking dish, spreading evenly. Bake according to package instructions until a toothpick inserted comes out clean.
  4. Cool the cake for 15 minutes in the pan. Poke holes in the cake with a fork.
  5. Mix together the lime juice and zest in a separate bowl. Pour this mixture over the cake.
  6. Spread the whipped topping evenly across the cake.
  7. Sprinkle the shredded coconut on top and add toasted coconut for garnish.
  8. Chill the cake in the refrigerator for at least 2 hours before serving.

Notes

You can make the cake a day in advance. Allow it to cool completely before adding the lime mixture and topping with whipped cream.
